If you’ve been to one of my workshops lately then you would have been lucky enough to try my yummy einkorn bread. But do you know what einkorn is?
The Einkorn grain has been untouched by hybridization and has retained its primitive genetic code that contains only 14 chromosomes — a huge difference from the 42 chromosomes contained in modern hybridized wheat. This superior ancient grain also contains less gluten than modern whole wheat and is more abundant in many vitamins and minerals. Here are some great recipes that I’ll be trying out with my einkorn.
Einkorn Pumpkin Muffins
Method:
Preheat oven to 180 degrees celsius
Grease muffin pan with coconut oil
Combine flour, baking powder and salt in a medium bowl.
In a large bowl, cream sugar and coconut oil until smooth and fluff.
Add eggs one at a time.
Mix in pumpkin puree.
Add essential oils, stirring the toothpick ones through the mixture.
Pour mixture in to muffin panBake for 50 minutes
Orange Goji Berry Muffins
Ingredients:
2 cups of Gary’s True Grit® Einkorn Flour
1 cup orange juice
1/2 cup Ningxia wolfberries (Goji Berries)
4 tbs honey4 tbs coconut oil
2 eggs
2 tsp of Orange pulp
1 tsp vanilla
1/2 tsp salt
Method:
Preheat oven to 190 degrees Celsius
Grease muffin pan with coconut oil
Combine eggs and oil and then mix together other wet ingredients, along with the wolf berries.
Mix wet ingredients in to fry and whisk until incorporated
Bake for 35-40 minutes or until golden brown.
Oatmeal and Raisin Cookies
Ingredients:
3 cups oatmeal
2 cups of Gary’s True Grit® Einkorn Flour
1 cup raisins
1/2 cup coconut sugar
1/2 cup coconut oil, softened
2 eggs
1 tsp baking powder
1 tsp vanilla essence
3 drops Cinnamon bark essential oil
3 drops ginger essential oil
1/2 tsp salt
Method:
Preheat oven to 180 degrees Celcius
In a large bowl beat sugars and coconut oil until creamy.
Add eggs, vanilla and the essential oils. Beat until incorporated.
Add the flour and mix well.
Add oatmeal and mix well.
Stir in the raisins.
Drop onto uncreased cookie sheet. Press flat.
Bake for 9-13 minutes or until golden brown.
